ingredients: (Lemon Bars) 2 cups Cashew Butter 1/2 cup lemon juice 1/3 cup Coconut Oil, gently melted 1 T lemon zest pinch Pure Vanilla Powder (Cranberry Topping) 1 cup Oregon Cranberries 1 cup medjool dates, pitted pinch Pure Vanilla Powder, Camu Camu Powder to create: 1. Blend all Lemon Bar ingredients in a food processor. Line a baking pan with parchment paper and press the lemon bar dough into the pan evenly. Set in freezer for 30 minutes. 2. Blend all Cranberry Topping ingredients in a food processor OR just mix together by hand. 3. Top the bars with the Cranberry mixture…set in fridge for at least 1 hour.. slice up.. and munch on! Super light and refreshing.
