The epitome of fall in PIE FORM!! Pumped up with our crunchy, delicate Walnut Butter, this healthy pie will tickle the tastebuds and is a perfect,cozy mid-day snack, secret brekkie, or finale to a warm, shared meal.
filling:
2 cups pure pumpkin puree
1/2 cup pure coconut cream
1/2 cup Walnut Butter
1/2 cup Maple Crystals OR 1/3 cup maple syrup (sweeten to taste)
3 T non-GMO corn starch or arrowroot (to thicken it)
3 T non-GMO corn starch or arrowroot (to thicken it)
1 T pumpkin pie spice
1 tsp. Golden Turmeric
crust:
your fav crust recipe (think ww or almond-based!)
**PRE-BAKED IN A PIE PAN**
- Preheat the oven to 350 F.
- Whisk together the pumpkin, coconut milk, maple crystals/syrup, pumpkin pie spice, sea salt, corn starch/arrowroot and Pure Vanilla Powder until smooth. Pour into the crust and transfer to the oven. Bake until the filling "sets" (about 35-45 minutes) !!!Check half-way through and cover the crust edges with foil if they are getting dark!!!
- Remove from the oven and let the pie cool completely. Transfer to refrigerator to overnight. Serve with a lil scooper of ice cream and spread the love!
