Tofu Scramble
Ingredients
- Chopped veggies
- 1 pkg firm tofu
- 1 TBSP coconut oil
- 1/2 cup nut milk
- 1TBSP turmeric powder
- 1 TBSP tamari or soy sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup nutritional yeast
Instructions
- Sautéed veggies in coconut oil in large pan
- Mash tofu with a fork
- Add tofu to pan and cook for 3-5 minutes
- In a small bowl whisk together nut milk, nutritional yeast, tamari, turmeric, salt, and pepper
- Add whisked mixture to pan and simmer
- Stir often and let scramble cook and incorporate for 5-7 minutes
- Serve and enjoy!
