Tofu Scramble

Tofu Scramble 

Ingredients

  • Chopped veggies 
  • 1 pkg firm tofu 
  • 1 TBSP coconut oil 
  • 1/2 cup nut milk 
  • 1TBSP turmeric powder 
  • 1 TBSP tamari or soy sauce 
  • 1 tsp salt
  • 1/2 tsp black pepper 
  • 1/4 cup nutritional yeast

Instructions 

  • Sautéed veggies in coconut oil in large pan
  • Mash tofu with a fork 
  • Add tofu to pan and cook for 3-5 minutes
  • In a small bowl whisk together nut milk, nutritional yeast, tamari, turmeric, salt, and pepper
  • Add whisked mixture to pan and simmer
  • Stir often and let scramble cook and incorporate for 5-7 minutes 
  • Serve and enjoy!
