Raw Vegan Raspberry Cheesecake

 

Ingredients:

 

Crust:

1 cup Walnuts 

5 Dates 

1 Vanilla Bean (scraped)

1/2 cup almond flour 

1 tsp salt 

1 TBSP melted coconut oil 

1 TBSP water

 

Filling: 

1 cup cashew butter 

1/2 cup maple syrup 

1/2 melted coconut oil 

1/2 lemon (juiced) 

 

Topping:

2 cups Fresh or Frozen Raspberries 

2 TBSP maple syrup

 

METHOD

Add crust ingredients to blender and pulse until combined  

Press crust dough into 8” pie pan

Set in freezer or fridge while you make the filling 

Wash out blender, then add filling ingredients and blend on high until smooth 

Pour filling into pie pan on top of crust 

Chill while you make the topping 

Blend raspberries and maple syrup in blender until smooth 

Pour onto pie and spread 

Place pie in freezer to set for 1-2 hours 

Slice and Enjoy!!
