INGREDIENTS:

  • 1 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 tablespoon maple crystals 
  • 1 tsp vanilla powder 
  • 1 ¼ cups milk 
  • 1 TBSP Pumpkin Protein powder 
  • 1/2 cup pumpkin puree 
  • 1 egg
  • 3 tablespoons butter, melted

INSTRUCTIONS:

  1. Combine all dry ingredients in a large bowl and stir. 
  2. Make a well in the center of the bowl and add wet ingredients 
  3. Whisk until smooth 
  4. Heat griddle on medium heat 
  5. Melt butter or oil on the griddle and laddle on batter  
  6. Flip when bubbles form 
  7. Cook until golden brown 
  8. Enjoy with maple syrup, coconut whip cream, and a sprinkle of pumpkin seeds for a fall time treat that nourishing and delicious!
