Pumpkin Protein Pancakes by Shivaani
INGREDIENTS:
- 1 ½ cups all-purpose flour
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 tablespoon maple crystals
- 1 tsp vanilla powder
- 1 ¼ cups milk
- 1 TBSP Pumpkin Protein powder
- 1/2 cup pumpkin puree
- 1 egg
- 3 tablespoons butter, melted
INSTRUCTIONS:
- Combine all dry ingredients in a large bowl and stir.
- Make a well in the center of the bowl and add wet ingredients
- Whisk until smooth
- Heat griddle on medium heat
- Melt butter or oil on the griddle and laddle on batter
- Flip when bubbles form
- Cook until golden brown
- Enjoy with maple syrup, coconut whip cream, and a sprinkle of pumpkin seeds for a fall time treat that nourishing and delicious!
