We've heard a well balanced diet is a taco in each hand. ;) That must ring especially true with these plant based Walnut "Meat" Tacos! Make your own vegan version of the viral TikTok Pink Sauce!
Serves 3-4
Vegan Pink Sauce:
(Cilantro Cashew Crema)
- 1/2 cup soaked cashews or Wilderness Poets Cashew Butter
- 2 tsp. Wilderness Poets Dragon Fruit Powder
- Juice of 1/2 a lemon
- 1 large or 2 small grated garlic cloves
- Tbsp. of chopped cilantro
- Pinch of freshly cracked pepper
- H2O as needed
- Whisk or blend all ingredients together!
- 2 cups Wilderness Poets Walnuts
- 1 tsp cumin powder
- 2 tsp taco seasoning (garlic, onion, chili powder)
- 1 tsp soy sauce or tamari
- Add red pepper flakes for some heat
- Salt & pepper to taste

Pulse 3-5 times in food processor or give rough chop. (Make sure to not over do this step, you don't want the mixture to turn into butter!)
Saute:
- Coconut oil
- 1 large onion
- 2 garlic cloves
- Cook until partially translucent
- Add walnut mixture, cook for 5 minutes or until desired (can enjoy raw too!)
- Salt & pepper to taste
Toppings:
- Purple cabbage
- White onion
- Wilderness Poets Pumpkin Seeds
- Cilantro
- Radish
- Black beans
- Dragon Fruit Pink Sauce (Cilantro Cashew Crema)
Enjoy as tacos, on a tostada, in a burrito or ditch the tortilla all together and have this yummy meal in a bowl!
