These super-easy-to-make Blueberry-Coconut Cashew Bites by @crunchynev will keep you powered up and fueled throughout the day!
ingredients:1 cup Cashews
1 cup coconut flakes or shreds
1/2 cup medjool dates
2 T Chia Seeds
a handful Oregon-Grown Blueberries
pinch Pure Vanilla Powder
+ pinch sea salt
to create:
1. Blend all of the ingredients except Blueberries and coconut in a food processor until a "dough" forms.
2. Incorporate Blueberries into the "dough", roll into spheres, roll in coconut and share with your friends! These will keep well in the refrigerator for a few weeks.
