Gluten-Free Coconut Pumpkin Pancakes

ingredients:
1/2 cup Raw Almonds, ground into flour
2 T coconut shreds or flakes, ground into flour
1 T Chia Seeds, ground into flour
1 egg, whisked
1 cup pumpkin puree
2 T honey
3 T Coconut Oilgently melted..1 T in pancake recipe, 2 T for fryin' up each pancake
pinch sea salt
to create:
1. Grind all dry ingredients together in a blender until smooth.
2. Mix wet ingredients into dry ingredients, form into patties, and fry individually with Coconut Oil.
3. Top with coconut shreds, almonds, a lil yogurt, a lil maple syrup, honey, or eat straight up!!
