Today, I bring you..the famous.. Coconut Chia "Tapioca" Pudding. Super easy recipe---just mix ingredients in a jar and shake! This pudding is SO delicious, and is reminiscent of coconut ice cream..on the beach....sitting underneath a palm tree...in a hammock...OKAY, ENOUGH!
ingredients: 1/4 cup White Chia Seeds 1 cup water 1 cup coconut milk 1/4 tsp. Pure Vanilla Powder 1 T Maple Crystals + 1 glass jar with tight lid to create: 1. Combine White Chia Seeds with water and coconut milk into jar....SHAKE VIGOROUSLY! The Chia Seeds will sprout and form into a gel. (hum the chia theme song for a minute or two) 2. Stir in Pure Vanilla Powder and Maple Crystals. 3. Serve and savor!
