Vegan (maple sweetened) Vanilla Cake

 

Ingredients: 

  • 1/2 cup sunflower oil
  • 3/4  cup oat or nut mylk
  • 1/3 cup maple crystals
  • 1 TBSP white vinegar
  • 1 tsp vanilla powder
  • 1 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Instructions: 

  1. Preheat oven to 350 degrees
  2. Whisk together oil, mylk, vinegar, maple crystals, and vanilla in a large bowl.
  3. Add remaining ingredients and incorporate well without over mixing
  4. Pour batter into cake pan
  5. Bake for 20 minutes or until knife comes out clean.
  6. Let cool partially in pan and then on a baking rack.

 

Top with cashew frosting, strawberry chia jam, coconut cream and berries, dust with maple crystals, or enjoy on its own 💗
