Home made soft Pretzels! What a treat! We used our maple crystals in place of sugar typically used to activate the yeast in the dough. 🍁
1 TbSP yeast
1 TBSP maple crystals
1 1/2 cup warm nut or oat milk
3 1/2 cups Unbleached flour
1 tsp salt
1/3 cup oil
- Combine yeast + maple crystals + warm milk in medium sized bowl until frothy
- Add oil, salt, and flour gradually while mixing
- Knead on lightly floured surface for about 3 minutes
- Return to bowl and cover to rise in warm place for 40 minutes to an hour
- Pinch dough down and divide into 6 sections
- Roll each bit of dough into a long rope and then twist into pretzel shape
- Boil a medium- large size pot of water plus 1/3 cup baking soda
- Drop one pretzel at a time into baking soda bath for 10-20 seconds (no longer!)
- Remove pretzels with a slotted spoon and transfer onto parchment lined baking tray
- Add salt
- Bake at 400 degrees for 12-15 minutes or until golden brown
- Serve warm on its own or with a cashew cheese dipping sauce
*** another variation is maple sugar and cinnamon pretzels **** 🥨 follow instructions as above, just sprinkle maple crystals + sugar onto pretzels before baking
