Nutty Energy Bites

The perfect zesty and creamy bite!


1 Cup Pitted Dates, chopped 

1 Cup Cashews

0.5 Cup Cashew Butter 

1/3 cup of shredded coconut 

Zest of 1 medium lemon

Feel free to add any spices you'd like, i.e. Vanilla Powder 

To create: 

Place the chopped dates in a food processor and process until smooth. Add the cashews, cashew butter and lemon zest and process until the mixture forms a dough ball. You may need to scrape down the sides and help the mixture along to form the dough ball. If you don't have a high powered mixer and things aren't moving along as well as you'd like, feel free to add softened coconut oil (1 teaspoon at a time) as you go to help mixture along. 

Once the ball has formed, move to a plate. Scoop tablespoon sized amount of dough and roll into a ball using your hands. Place in fridge for 2 hours, enjoy! 

Store in sealed container in refrigerator and grab for a quick breakfast or snack. :)
