Pumped up with a lil scoop of Kale Powder, this springtime infusion is the perfect light, yet nourishing sauce to perk up a bowl of fresh noodles, roasted veggies, or steaming brown rice! We added sautéed mushrooms, pea vines, cauliflower, and my favorite spring garden "weed", Lamb's Quarter, to a bowl of fresh egg noodles and...OOOOOOOHWHEEEEEE!!!!
ingredients:
3/4 Cashews, soaked for two hours (or Cashew Butter)
2 avocados, ripe
1/2 cup extra virgin olive oil
1/2 cup parsley, basil
1 lemon, juiced
3 cloves garlic, minced
1 tsp. Kale Powder
sea salt and pepper, to taste
to create:
1. Blend all ingredients in a food processor until creamy and smooth.
2. Smother all over your favorite grains, beans, and veggies! OOOOHWHEEEEE! Spread the love!!
