Cranberry Walnut Vegan Cookies

2 cups unbleached white flour 

1 tsp salt 

1/2 tsp baking soda 

1 tsp chai spices (optional)

1/2 tsp vanilla powder (optional)

1 cup sunflower oil 

1 cup maple crystals 

1 cup rolled oats 

1/2 cup chopped walnuts 

1/2 cup dried cranberries 

1 egg replacer (flax/ chia/ your preference) 

 

Instructions 

1. In a medium sized bowl whisk together oil, maple crystals, egg replacer, vanilla, and chai spices 

2. Stir in flour, salt, baking soda, and oats 

3. Fold in cranberries and walnuts 

4. Form into 12 balls and place on parchment lined baking tray 

5. Bake in 350 degree oven for 5 minutes

6. Open oven and flatten cookies down using the bottom of a small bowl or jar 

7. Bake another 7 minutes 

8. Remove from oven and let cool a few minutes before enjoying
