Raw Strawberry Shortcake!

2 cups medjool dates, pitted
2 cups coconut shreds or flakes
pinch Pure Vanilla Powder
(Cashew Cream--reserve 1/2 cup for top frosting)
2 cups Raw Cashew Butter or Cashews
6 medjool dates, pitted
1 T raw honey
*splash nut milk if necessary for blending
2 pints…for layering. Reserve 1/2 cup for top frosting.
(Strawberry Frosting)
1/2 cup reserved Strawberries
1/2 cup reserved Cashew Cream
to create:
1. Line a glass pie pan with parchment paper.
2. Blend all Crust ingredients.
3. Press evenly into pan, top with sliced Strawberries, and set in freezer for 20 minutes.
4. Blend Cashew CreamSpread over top of the Strawberries. Set in freezer for 20 minutes.
5. Cover layer with sliced Strawberries. Cover with Cashew Cream. Set in freezer for 20 minutes.
6. Decorate! Blend up Strawberry Frosting…spoon into plastic bag…cut out the corner, and pipe lil swirlies..add some sliced strawberries…and set in freezer for 2 hours. Slice it up and seeeeerve the love!!
