4 sweet potatoes, cut into wedges
3 T olive oil
2 T Za'atar
sprinkle: red onions, green onions, kraut
1 part honey: 1 part mustard, whisk
1. Preheat oven to 400.
2. Coat sweet potato wedges with olive oil, za'atar, sea salt and bake until roasted, ~45 minutes.
3. Garnish with sauerkraut, red onions and Oregon Pumpkin Seeds.
