This Vegan Banana Walnut Bread is outrageously soft and fluffy. Made with simple, wholesome ingredients, this could be a dessert, or a perfectly satisfying and healthy breakfast! Turn it into muffins even, if you like! If you have yet to sub in our maple crystals for sugar in baking recipes..... you are missing out! Easier on the body than cane sugar, and is the perfect swap in recipes. Also, white vinegar + baking soda is my go-to egg replacer in cakes and muffins... give it a try! Of course, here with have mashed bananas, which also does the job. The addition of both, makes for the extra fluffy consistency on this recipe. Hope you like it! It is a family FAV!
INGREDIENTS
2 bananas, mashed
1/2 cup melted coconut oil
1/2 cup maple crystals
1 tsp cinnamon
1 tsp vanilla powder
1 TBSP white vinegar
1 1/2 cup flour
1 tsp baking soda
2/3 cup milk of choice
1/3 cup walnuts
- Preheat oven to 350 degrees
- Mash bananas with a fork in a medium size bowl
- Add melted coconut oil and stir
- Add maple crystals, cinnamon, and vanilla and mix well
- Add white vinegar and milk
- Sift flour into bowl
- Add baking soda and walnuts and stir well
- Pour mixture into parchment lined bread pan and bake for 40 minutes
- Let cool, slice, and enjoy!
