Bright Blue Blueberry Chia Pudding

 

This healthy breakfast, treat, or anytime snack is gorgeously colored with our vibrant Blue Butterfly Pea Flower Powder, gently flavored with vanilla and maple, and layered with lemon yogurt and fresh blueberries, for a parfait style treat everyone will LOVE! 

Ingredients:

1 cup milk of choice (we used Cashew Spin nut milk concentrate to make our own)

3 TBSP Chia Seeds

1 TBSP maple syrup or maple crystals

1 tsp Blue Butterfly/ Blue Matcha powder

1/3 cup yogurt of choice 

Handful of fresh berries on top 

 

Method:

Combine the chia seeds, milk, blue butterfly powder, and maple in a medium size bowl and mix well.

Let the chia mixture sit for 20 minutes, stirring occasionally

Mixture will naturally thicken and is ready to layer into your parfait creation!

Layer it up with yogurt and berries.

Serve and enjoy, or store in the fridge for later.

 

This makes two servings, and keeps well in the fridge for several days.
