Your garden, your neighbor's garden, your friend's garden or the supermarket's garden is blooming and busting with basil this time of year....you need a quick and easy, one grind sauce to slather all over your favorite summer veggies.. HERE IT IS! @crunchynev concocted this perfectly nutty, vegan pesto just for you!
4 cups basil
1/2 cup Almonds or Almond Butter
1/2 cup extra virgin olive oil
4 cloves garlic
handful of Cashews
to taste: sea salt, black pepper, lemon juice
1. Blend all ingredients and add salt, pepper and lemon juice to taste.
2. Spread on crackers, noodles, zoodles (zucchini noodles!), add to veggies, rice bowls, etc. YUMMMMMM! Keeps in the fridge for a few days.
