This is the perfect nourishing warm bowl of goodness!! With medicinal spices, and rice + lentils making a complete protein, it is one of our favorites!
🌱INGREDIENTS🌱
1 cup rice
1 cup red lentils
3 yams (chopped)
3 carrots (peeled and chopped)
3 tomatoes (chopped)
3 inch chunk of ginger (grated)
3 quarts of water
1 can coconut milk
2 TBSP oil
1 tsp cumin seeds
1 tsp coriander seeds
1 tsp black mustard seeds
2 tsp turmeric powder
1/4 tsp black pepper
1 TBSP salt
1 lime
1 bunch cilantro
🌱METHOD🌱
1. Heat large pan on medium heat.
2. Add oil then mustard seeds, cumin seeds, and coriander seeds + fry for a few moments. Mustard seeds will start to pop. Then add ginger, turmeric, black pepper + chopped tomatoes.
3. Cover and let simmer for a few minutes
4. Rinse rice and lentils well
5. Add rice, lentils, sweet potatoes, carrots, and water to pot.
6. Turn heat to high until stew begins to boil. Reduce heat and let simmer for 20-30 minutes, stirring regularly.
7. Add coconut milk and let simmer for another 5-10 minutes.
8. Turn off heat, then add lime, chopped cilantro, and salt.
9. Serve and enjoy!
