Carrot Ginger Soup 🥕
creamy •dreamy • delicious
4-5 carrots
2 inch chunk of fresh ginger
1 small yellow onion
3 cloves of garlic 🧄
1/2 cup cashews
1/2 cup coconut milk powder
Salt pepper
1 quart of water
- Roughly chop onions, garlic, carrots, and ginger
- Boil for 20 minutes along with the cashews (or pre-soak cashews)
- Let cool for 10 minutes
- Pour contents into high powdered blender with coconut milk powder, salt, and pepper
- Blend on high until smooth
- Serve or store and re-heat
