Carrot Ginger Soup

creamy  •dreamy • delicious 

4-5 carrots

2 inch chunk of fresh ginger

1 small yellow onion

3 cloves of garlic 🧄

1/2 cup cashews

1/2 cup coconut milk powder

Salt pepper

1 quart of water

 

  1. Roughly chop onions, garlic, carrots, and ginger
  2. Boil for 20 minutes along with the cashews (or pre-soak cashews)
  3. Let cool for 10 minutes
  4. Pour contents into high powdered blender with coconut milk powder, salt, and pepper
  5. Blend on high until smooth
  6. Serve or store and re-heat
