Packed full o' carotene, these carrot muffins are suuuuuper healthy-- a powerful way to re-up and reenergize! ingredients: (Carrot Muffin) 2 cups carrots, shredded 1/2 cup Almonds, Hazelnuts, or oats 1 cup Walnuts OR Almonds 1 cup medjool dates, pitted pinch Pure Vanilla Powder, cinnamon (Cashew Cream Chz Frosting)**will probably make extra**yum** 1 cup Cashew Butter 1 T Maple Crystals OR maple syrup pinch Pure Vanilla Powder, sea salt Cacao Nibs, for topping to create: 1. In a food processor, blend all ingredients for the Carrot Muffin. Mold them into cupcake tins and set in freezer. 2.
