INCREDIBLE!! These volcanoes are exploding with the gooiest molten lava of your deepest, darkest chocolate dreams! Super easy to create…sending seismic waves of happiness all a-round!!
(Chocolate Mountain Base/Volcano Crater)
1 cup Almonds or Almond Butter
1 cup Walnuts
1 cup medjool dates, pitted or raisins or currants
1/4 bag Cacao Paste OR Raw Cacao Powder
(Even Chocolate-ier Molten LAVA):
3/4 cup Cacao Paste + raw honey or maple syrup (2+ T, to taste)
Gently melted in double boiler pinch Pure Vanilla Powder, Maca Powder, cinnamon, sea salt a little water or nut milk to thin out lava, allowing it to flow further!
Goji Berries, for topping
to create: **I didn't have cupcake/muffin wrappers, so I just used a muffin tin lined with small pieces of parchment**
1. Blend all ingredients for Chocolate Mountain Base/Volcano Crater, and scoop a bit into each muffin/cupcake section in the tin (lined with parchment or cupcake paper wrappers). Make sure each tin has the same amount..and smooth it down in! Let it set in the freezer for at least 30 minutes.
2. Scoop all the Even Chocolate-ier Molten LAVA on top of each Mountain Base.. getting ready to explode with LAVA! Set in freezer for 30 minutes.
3. Top each Mountain Base with a VOLCANO CRATER! Top with goji berries and additional lava, if you are feelin' like Mt. St. Helens back in her day…
4. Set in freezer for at least 30 minutes.
