ingredients:
1 T miso paste
1 tsp. lemon juice
1 tsp. tamari, shoyu, or soy sauce
1 T minced garlic
Vegetables of choice: tomatoes, zucchini, red onion, red pepper, potato...avocado!
Brown rice or quinoa, cooked
to create:
1. Whisk all ingredients together, slather over vegetables, and roast at 350F for 45 minutes.
2. A scoop of rice, topped with avocado.... and dig in!
