ingredients:
1/2 pound masa harina (corn flour treated with lime (nixtamalization...read more about the process!) can usually be found at a mexican grocer or, if you're lucky, your favorite bulk section)
2/3 cup Sweet Mesquite Powder
1 T Coconut Oil, to coat pan
1 1/4 cups water
2 tsp. sea salt
to create:
1. Mix all ingredients thoroughly.
2. Roll into small balls.
3. Press between two plates to make round, even, flat tortillas.
4. Coat pan with Coconut Oil, and lightly cook each tortilla until firm/cooked.
5. FIESTA!!! Rice, beans, thinly sliced radish, fresh cilantro....tempeh..huevos rancheros...cut into triangles to make chips...YUM!!!
