This creamy, dreamy Mac N Cheese is DELICIOUS! Check it out!
INGREDIENTS
2 cups peeled and cubed butternut squash
1/2 small onion chopped
3 cloves garlic chopped
1 cup mylk
1 TBSP cashew butter OR 1/2 cup cashews
1/2 cup nutritional yeast
Squeeze of lemon
2 TBSP olive oil
2 TBSP salt
Ground black pepper to taste
METHOD
1. Boil squash until fork tender
2. Sautée onions and garlic
3. Cook pasta
4. Drain squash and pour into blender with all the other
ingredients
5. Blend until smooth
6. Strain pasta
7. Return pasta to cooking pot and pour over butternut
cheese sauce
8. Stir over low heat until warm
9. Enjoy!!
