Copycat KIND Bars

DIY KIND Bars, chock full of nuts, sweetened with brown rice syrup and maple crystals, and way cheaper than store bought bars... not to mention much healthier, with no weird oils or other ingredients! 

1 cup hazelnuts

1 cup almonds

1 cup pecans

1 cup puffed millet

1 TBSP ground flax

1 TBSP ground chia seeds

1 tsp vanilla

1 tsp salt

1/4 cup brown rice syrup

1 cup cacao paste

3 TBSP coconut oil

3 TBSP maple crystals

 

1. In a large mixing bowl combine pecans, almonds, hazelnuts, popped millet, vanilla, salt, chia, flax, and brown rice syrup 2. Mix well 3. Press mixture into an oiled parchment lined baking tray and bake at 350 f for 15 minutes 4. Let cool and then pop into the freezer for 20 minutes or so 5. In the meantime, in a small bowl, melt cacao paste 6. Add melted coconut oil and maple crystals and stir until smooth 7. Remove baking on from freezer and pull out the parchment paper and bars 8. Carefully cut into bars (Heat and/ or coat your knife with oil , the bars are sticky!) 9. Return cut bars to freezer for 10 minutes 10. Dip in bottom of each bar in chocolate and place on new parchment paper 11. Drizzle tops with more chocolate and return the bars to the freezer for 10-15 minutes 12. Clean up any spread out chocolate from the edges with a knife and store in a sealed container or individually wrap in parchment paper and tie with string for super cute, homemade + individually wrapped bars to pack for snacks!
