Tomatoes and basil exploding out of your garden? MAKE THIS! Lighter than traditional pesto, you can add this to pasta, salad, toss with vegetables or mushrooms, eggs...the possibilities are endless!
2 cups Olive Oil-Herb Roasted Cherry Tomatoes
(Toss tomatoes with EVOO, your favorite herbs, salt, pepper, and roast at 400F till wrinkly, aromatic, and delicious)
1/2 cup fresh basil
1/2 cup Raw Almonds
2 T Extra Virgin Olive Oil
1. Blend all ingredients in a food processor to desired consistency. I reserved half the roasted tomatoes to pulse a few times and then add in to the smooth pesto for a lil texture!
