Okay! I'm officially addicted to making raw pies....they are so beautiful on the eyeballs, so tasty on the tastebuds, and so healthy for the spirit! Another raw pie inspired by the raw-dess herself, Julia Corbett, from her (un)cookbook Sweet & Raw Pie Mandalas-- Superfood Nutrient-Ruch Delectable Desserts (Berries and White Chocolate Pie, page 86). Support the arts, tastebuds, and nourish your mind, body, and spirit with a persy copy here. Incredibly decadent, this pie is surprisingly light, and perfect for a summer night indulgence!
Berry Chocolate-y Dream Pie
Berry Chocolate-y Dream Pie
ingredients:
(Crust)
2 cups coconut, flakes or shredded
1 cup Cacao Nibs
2 T Coconut Oil or Butter, melted
1/4 cup honey
1 T Maca Powder
1 T fresh orange juice
1/4 tsp Pure Vanilla Powder
1/4 tsp Himalayan Sea Salt
(Filling)
1 cup strawberries
1 1/2 cups blueberries
1 cup Hemp Seeds
100g (~ half a bag) Raw Cacao Paste, gently melted double broiler style
1/3 cup honey
pinch Pure Vanilla Powder
Raw Pecans, for topping
to create:
1. Pulse cacao nibs in a food processor until crumbly (I like them to remain a little bit nibby-bib-ular, nib-ulous!).
2. Add additional crust ingredients, and blend until well incorporated. Press into pie plate. Chill in fridge.
3. Blend all filling ingredients until smooth and creamy. Pour into pie plate. Chill for at least 30 minutes, press all your favorite mandala toppings on top! Chill for an additional 2 hours.
4. Share! Celebrate! Knock on your neighbor's door, and give them a slice of your beautiful pie... inspire them to make one themselves! Share a recipe, and swap pie slices every other week! Okay.. I'm dreaming heeeeeeyah... but, soon, I hope, it will become a reality in my world!
