Discover chocolate at its origin. Our Organic Cacao Paste is made with one exceptional ingredient: wild, heirloom Arriba Nacional cacao beans from the high-elevation volcanic mountains of Ecuador. This is not farm-grown, cultivated cacao - these are wild, mature between 30 to 80 years old, growing in highly mineralized volcanic soil and watered by rain and deep mountain springs, not commercial irrigation. The mature pods are hand-selected, carried down by donkeys, sun-dried and lightly fermented to bring out their deeply complex, aromatic flavor. Stone-ground below 120°F, this is 100% pure, unsweetened raw chocolate in its most rustic form.

Chocolate Making: Cacao Paste is 100% dark chocolate. To make chocolate treats simply melt the cacao paste, add sweetener, pour the mixture into a tray or mold, and then chill in a refrigerator until solid. 

Our Arriba Nacional Cacao Paste is incredibly versatile for making raw chocolates and decadent treats. This is 100% dark chocolate in paste form—simply melt it, add your preferred sweetener (honey, maple, coconut sugar), and pour into molds or trays to create homemade chocolate bars, truffles, or bark. The deeply flavorful, heirloom variety delivers rich, complex notes. Make luxurious raw hot chocolate by melting a piece into warm nut milk with sweetener and vanilla or use it to create chocolate ganache, fudge, and brownies.

Because this paste contains both the cacao butter and powder in their natural ratio, it melts beautifully and creates a strong, silky-smooth texture.
