Vegan Cashew Caesar Dressing

This caesar dressing will have coming back for seconds. It's creamy, garlicky and flat out delicious. Throw some ingredients into a blender and, poof - you've got a yummy dressing for the week! 

In your blender goes: 

1/2 cup Wilderness Poets Cashews (soaked overnight, or at least 2 hours) the longer the cashews soak, the creamier the dressing will be. If soaking overnight, keep cashews in refrigerator. 

2 Tbsp. extra virgin olive oil

1 Tbsp. lemon juice

1/2 Tbsp. dijon mustard

1 Tsp. garlic powder

1 Tsp. nutritional yeast

1 small garlic clove

2 Tsp. capers

1/2 Tsp. fine grain salt and pepper, or to taste

Blend until smooth

Enjoy over salad, roasted veggies or a slaw. :)
